Vegan Tiramisu

Ladyfingers Ingredients

  • 2 2/3 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/2 cup vegan margarine
  • 1/3 cup maple syrup
  • 1/2 cup non dairy milk
  • Additional flour for dusting and rolling ladyfingers

  • Cocoa powder
  • Vegan chocolate shavings

This Tiramisu calls for some unexpected ingredients like, cold-brew coffee, Dandies Marshmallows, and Aquafaba that come together for a taste so legit, non-vegans wouldn't know the difference!


Lady Finger Instructions

To make the ladyfingers, sift together flour, baking soda, and baking powder in a bowl and set aside. In a stand mixer cream together vegan margarine and sugar. Add maple syrup, vanilla and non dairy milk and mix until combined. Cover with plastic and let dough chill in the refrigerator for an hour. Preheat oven to 350 degrees and line two cookies sheets with parchment paper. On a lightly floured surface, roll dough into 1” balls. Roll each dough ball into a two inch stick and place on the cookie sheet. Keep about two inches between each one. Bake for 8-10 minutes. Let cool for one minute before transferring to a cooling rack.


Tiramisu Filling Instructions

Fit the whisk attachment on a stand mixer (a hand mixer will also work) and whisk the liquid from a can of chickpeas until it resembles a meringue (Aquafaba) and high peaks have formed. Meanwhile, in a microwave safe bowl heat up Dandies in 30 second intervals, giving a quick stir between each one. Once melted, add marshmallow cream to the stand mixer with the chickpea liquid. Add sugar, vanilla and marsala to the mixture and continue to whip until thoroughly combined.


Tiramisu Construction Instructions

Dip the ladyfingers in the coffee for 3 seconds and transfer to a glass dish. Layer the dipped ladyfinger cookies and spread a thick layer of the marshmallow fluff on top of them. Repeat with a second layer of cookies and another layer of marshmallow fluff. Using a sifter, garnish the Tiramisu with cocoa powder and sprinkle on chocolate shavings. Cover with plastic wrap and let chill in the refrigerator for at least an hour.
