INGREDIENTS:
Crispy Treat Cupcake Ingredients 
- 5 cups Crisp Rice Cereal 
- 2 Tbsp Coconut Oil 
- 2 Tbsp vegan butter 
- One (10 ounce) package of Dandies® Mini Marshmallows or Dandies® Marshmallows 
- 1 tsp almond extract 
- 12 raw almonds, optional (for garnish) 
Frosting Ingredients 
- 3 cups powdered sugar 
- 1/2 cup vegan butter 
- 1 tsp vanilla extract 
- 2 Tbsp lemon juice 
- zest of one lemon 
INSTRUCTIONS:
Crispy Treat Cupcake Instructions
- In a microwave safe bowl, combine Dandies®, almond extract, vegan butter, and coconut oil. 
- In 30 second intervals, with a quick stir between each, microwave until marshmallows are fully melted. 
- Mix in cereal and stir until evenly coated with marshmallow cream. 
- Press mixture into lined cupcake pan. 
- Let cool and prepare frosting. 
Frosting Instructions
- In a stand mixer combine vegan butter, vanilla, lemon zest, lemon juice, and powdered sugar. 
- Mix until thoroughly combined. 
- Add more powdered sugar, if needed to reach desired consistency. 
- Once crispy treats cupcakes are cooled you can frost them.
