MARSHMALLOW topped sweet potatoes

Sweet potato casserole

INGREDIENTS:

  • One (10 ounce) package of Dandies® Mini Marshmallows

  • 2 Sweet Potatoes — Cut in half inch slices

  • 5 Tbsp Vegan Butter

  • 1/4 Cup Brown Sugar

  • 1/2 Tbsp Smoked Paprika

  • 1/4 tsp Ground Clove

  • 1/4 tsp Cinnamon

  • 1/4 tsp Allspice

  • Salt and Pepper to taste

INSTRUCTIONS:

  1. Preheat oven to 400 degrees.

  2. In a small bowl, mix together sugar and spices.

  3. Layer the sweet potato slices in a baking dish and sprinkle the spice mixture on top.

  4. Drop the tablespoons of vegan butter over the sweet potatoes and stir with a spatula.

  5. Cover with foil and bake for 40 minutes.

  6. Poke potatoes with a fork to make sure they are tender.

  7. Remove foil and sprinkle on Dandies® Marshmallows.

  8. Bake for an additional 5-10 minutes until the Dandies begin to puff up and turn golden. Enjoy!
