- 2 cups of Dandies Mini Marshmallows
- 5 cups of wheat square cereal
- 1 cup salted cashews
- 1 cup pretzels
- 3/4 cups brown sugar
- 3 tbsp sugar
- 6 tbsp vegan margarine (we use Earth Balance)
- 2 tsp water
- 1/4 tsp baking soda
- 1 cup vegan chocolate chips
- Peanut butter frosting (recipe follows)
Peanut Butter Frosting Ingredients
- 2 cups powdered sugar
- 2 tbsp peanut butter
- 2 tbsp vegan margarine (we use Earth Balance)
- 1 tsp vanilla
This decadent sweet and salty snack mix will be a stunner at your next party!
Peanut Butter Instructions
Using a stand mixer or hand mixer whip together all ingredients, until frosting is nice and fluffy.
In a large microwave safe bowl mix together wheat cereal, cashews and pretzels and set aside. In a small microwave safe bowl, combine sugar, brown sugar, and vegan margarine. Microwave in 30 second intervals, stirring between each until butter is fully melted. Add water and baking soda, stirring until dissolved. Pour over cereal mixture and stir until evenly coated. Microwave cereal mixture uncovered for 3 minutes, stirring every minute. Spread on a cookie sheet. Let cool for 10 minutes. Once cooled, break apart into bite size pieces. Sprinkle on Dandies.
Toppings and Finishing Touches
In a small microwave safe bowl, microwave chocolate chips for 30 to 60 seconds and stir until smooth. Transfer melted chocolate into a plastic bag and snip off a corner to squeeze & drizzle over snack mix. Transfer peanut butter frosting into another plastic bag and snip off a corner to squeeze & drizzle over snack mix. Let toppings harden & enjoy!
